The durum wheat named Senatore Cappelli was called the "chosen race" in the 30's - 40's and was widely used in the lands of Puglia and Basilicata. Its name comes in honor of Abruzzo Senator Raffaele Cappelli, promoter in the early twentieth century of agrarian reform that led to the distinction between hard and soft wheats. It is a hard wheat obtained by genealogical selection. For decades it was the most widespread crop, up to the spread of the most productive varieties. Durum wheat Senatore Cappelli is free from any contamination by mutagens induced by x and y rays of radioactive cobalt, unlike the varieties of durum wheat irradiated GM, now used in agriculture. It appears founded the hypothesis, that the genetic modification of the variety of modern grains, is related to a modification of their protein, and in particular of a fraction which is due to the gluten intolerance and allergies. Durum wheat Senatore Cappelli is an ancestor of the modern durum wheat and has the following features: the plant has a height of ca. 1.80 m higher than that of common wheat and contains higher percentages of lipids, amino acids, vitamins and minerals, as well as characteristics of high digestibility; It represents an alternative sweet and exquisite for the preparation of all the products currently used in the base of conventional grain; It has never suffered alterations of modern agriculture genetic manipulation techniques that sacrifice flavor and traditional content for high performance. Currently wheat Senatore Cappelli is produced exclusively by organic cultivation since 1993.
